Organic Homemade Carrot Cake

I stopped celebrating birthdays a really long time ago. It wasn’t something to celebrate for me, surviving another orbit around the local star — this rock we ride around on. Seeing as how I turned 61 today was an excuse to make a new cake, being a severe type 2 . I’m a sucker for carrot cake though — or I used to be. These days I don’t eat much in the way of sweets because it’s like having a wife or girlfriend…. Or eating bacon. You really like it, but it slowly kills you.
Someone else made this cake for me this morning and I definitely had to have the recipe for it, a new carrot cake recipe that uses no added sugar. Maple syrup (which Maine has plenty of) is the sweetener in this recipe. The great part of it is that I didn’t have to resort to extra insulin shots because my blood sugar never got above 187.
Ingredients for the cake:
2 cups grated organic carrots
3 large eggs
1/2 cup real maple syrup
1/2 cup melted coconut oil
1/2 cup plain Greek yogurt
1 tsp vanilla extract
2 cups oat flour
1 tsp baking powder
1/2 tsp baking soda
1 tbsp ground Ceylon cinnamon
1 tsp powdered ginger
1/2 tsp powdered nutmeg
1/4 tsp sea salt
1/4 cup raisins
1/2 cup crushed walnuts or pecans
For the frosting:
8 ounces of mascarpone cheese
1/4 cup Greek yogurt
1/4 cup real maple syrup
Pinch of sea salt
Preheat oven to 350*F. Grate carrots and add to mixing bowl, then add the wet ingredients and stir until well incorporated. In a separate bowl combine the dry ingredients until there are no lumps or streaks. Pour the dry ingredients into the bowl with the wet ones and mix well until smooth., no lumps. Add raisins and walnuts to the batter and stir in. Bake for 25 minutes. While the cake is baking, get the frosting ready. Allow the cake to cool and add as much frosting as you want. After frosting the cake, sprinkle cinnamon and shredded coconut over the top and let chill in the fridge. You can also add some more crushed nuts on top if you want.
The taste is unbelievable ! And without the extra added sugars this doesn’t blow my blood reading meter off the scale.
