Sunday Brunch Panini

It’s a typical slow Sunday around here, so I baked a fresh loaf of rye black bread early this morning. I already posted about that and you can check out the recipe I wrote out earlier. So what better thing to do with the heavy black rye bread than to make panini sandwiches with it ? Oh yeah !

I have an ancient panini grill that is massive. And it does a heck of a job without me having to actually light the burner on the kitchen stove.

I’m basically a carnivore who happens to also eat some vegetation on occasion. THIS — is not one of those occasions. Today’s panini is black rye bread toasted with butter and bacon grease, two slices of prosciutto, Kerigold aged melted cheddar on one side, melted Swiss on the other, wrapped around a couple slices of uncured bacon.

Oooohhhh….. look at all that melted cheesy goodness.

Of course it’s not exactly noon yet, but who’s counting the minutes ? I’m an adult here, and if I want to chase my panini with creamy smooth Guinness — then I will. I consider this as Kool-Aid for grown men. Everything tastes better with a good stout or porter… everything ! I just don’t have a fat dude dressed like a colorful pitcher of sugary drinks crashing through the wall, that’s all. Instead of “Hey Kool-Aide” oh yeah smashing through the wall, I get a sip and a chill out buddy. Nobody has to break anything today so we’re just going to mellow out with a mug or two of the frosty froth.

Again…. Look at that melty cheesy delectable plate of awesome bacon and gooey stuff.
