A Really Simple Pancake Recipe

Sometimes you have to just get back to the basics. While I do like to jazz up some of my homemade recipes to add fiber, or even other nutrients, there’s something to be said about keeping it super simple. In this instance, it’s my pancakes. I have a really simple recipe to make nice thick fluffy pancakes.
INGREDIENTS
1 ½ cups all-purpose flour
2 ½ teaspoons baking powder, aluminum-free
½ teaspoon salt
1 tablespoon sugar
1 ¼ cups milk, any (real buttermilk is preferred)
1 egg
3 tablespoons butter, melted
2 teaspoons vanilla extract, optional A pinch of cinnamon, optional

In lieu of all purpose flour, I will use self rising when it’s in my cabinet.

When eggs are in short supply or when I’m using my long term storage items, I’ll substitute Bob’s Red Mill Egg Replacer. Just follow the instructions on the packaging. For a REALLY “downhome flavor” my secret ingredient is a spoonful of bacon grease added into the batter. I tend to save bacon grease in a small jar in the fridge every time I make bacon.

By following the recipe above, the batter comes out a bit thicker. Not too runny to make pancakes that’s almost crepe - like, but no added fiber to make them cardboard-esque either.

I use my big non stick griddle straddling two burners set on medium low heat. I let the pancakes sit on this as thick as they want and I don’t turn them until the batter starts to form bubbles and gets kind of dry around the edges. I don’t disturb the pancakes while they’re cooking. These will fry up nice and fluffy on the griddle. I use the non stick griddle to prevent the pancakes from having a greasy taste from extra butter when cooking in a cast iron frying pan.
