My Version of Loaded “Potato Skins”
A lot of recipes exist for potato skins. Most people use russet potatoes and there’s nothing wrong with that at all. But I prefer smaller potatoes with a thinner skin. Why ? Because you don’t have to overcook them to make sure they’re done. My favorite is the Adirondack golds, although sometimes I use the reds. I scrub the potatoes and leave the peel on them. I place about 4 of them in the air fryer for roughly 40 minutes until they’re tender. I stab a couple holes with a

Winter Boots on the Cheap
It’s been a pretty long winter here in Maine so far. It’s late February and the weather guesser is saying that we’re in for another snowstorm by this weekend. Now the big deal here in Maine are “Bean Boots” made and sold by LL Bean. They’re nice… with leather uppers and rubberized lower parts of the boot. They’re great for the cold slushy muck of northern winter. But they are kind of pricey. And part of the problem with rubberized boots is that they trap moisture against your

Chicken Ditalini
This is a really simple no recipe dish. It contains only a few ingredients. I start of with a few ounces of ground chicken. I think shredded whole chicken breasts would add even more texture to this dish. The chicken gets cooked in the pan with a touch of extra virgin olive oil to brown it well. I put in a good shake of turmeric and black pepper, and a spoonful of minced garlic. I add a splash of single malt scotch to the pan, and let it simmer on low setting until it redu

Beef Chili Made From Long Term Storage Items
I decided to experiment some more with my long term storage foods that I keep on hand for camping and for emergencies. I live in a fairly remote part of Maine, (by choice) and sometimes in winter the power gets knocked out when snow tips the trees over onto power lines. Not to mention that I often haul my camping gear out into the backwoods for up to a week or more at a time during warmer months. So today I broke out some of my baggies of freeze dried stuff. Freeze dried bee

Ditalini Puttanesca
I’m pretty much an experimenter as far as food can go. Hey — I have a dog, so if it doesn’t turn out OK, I got an automatic “garbage disposal” of sorts. All except for ingredients that dogs can’t eat without getting sick. Today’s kitchen experiment was using just a few ingredients to make this dish. I have a box of ditalini pasta, and some freeze dried components, so let’s experiment ! I started off with about 2/3 cup of freeze dried beef crumbles. I add a cup of ditalin

M78 Swiss Vetterli Rifle .41 Swiss (center fire conversion)
In this video I shoot a Swiss Vetterli rifle converted from rimfire to centerfire cartridges. The rifle is an early model of repeating bolt action rifles and was a game changer for the Swiss military at the time. The Swiss Vetterli was magazine fed from the beginning in 1869, but later the mechanism was adapted to a single shot Italian Vetterli rifle with a slightly longer cartridge. But even the Italian Vetterli was adapted to be a repeater with a 4 shot box magazine, instea
