Simple Breakfast Burritos

A quick breakfast with a slight kick can be made really fast, and it’ll hold you over for a while in the morning. The ingredients are simple, and this food contains much of what you need for proteins and carbohydrates to kick start your day.

I start off frying 3 long strips of bacon. Surely you know how to fry bacon without instructions, right? I mean, what American doesn’t know what bacon is unless you are a foreign heathen? Of course you DID strain the bacon grease off the pan and save it into a separate container, right ? Always save your bacon grease since this stuff is almost worth it’s weight in gold when in the kitchen. A teaspoon of bacon grease adds a certain panache to homemade biscuits, and flavor that can’t be beat.


Then I make my scrambled eggs but I don’t chop them into smaller pieces. I cook them in larger lumps and make them a little richer with a touch of whole milk when I whip them up. You can add spices, minced garlic, onion pieces — whatever you want to at this point.

Now is when you get the fire and flavor. I’m a fan of hot sauces and peppers. So I like to roll my breakfast burritos with a little kick to them. You can go as mild or as wild as you want. This is a simple recipe after all.

Scoop the eggs, crumble the bacon, and a couple spoonfuls of hot salsa into the burrito and roll it up. I add a couple chunks of pepper jack cheese to the mix before rolling.

Once rolled, I like to nuke them in the microwave for about a minute to help melt the cheese and make sure the salsa is warmed up. I add a little more Melinda’s Ghost Pepper Sauce and a few red pepper flakes to the top and it’s time to dig in.

I like this recipe for how simple it is. No measurements, no specific instructions to follow. You can add anything you want. Like mushrooms? Add some. Put in some dirty rice or beans. The point is that you can cook at home and make some pretty good chow that’s not the garbage you get from fast food restaurants. Often it’s cheaper too.
